Carrot rolls filled with plum marmelade
If you have at home leftover plum marmelade from making Christmas tähtitorttu or you bought it like me at half price after Christmas and now thinking what to do with it, you´re on the right place!
For this recipe it is needed only few ingredients but the result is marvelous. The dough is slightly crispy, not too sweet with a light taste of carrot. Inside is plum marmelade filling which makes an excellent combination with the carrot dough. Also the texture of crispy surface and gooey inside is very pleasant.
Ingredients:
100 g wholegrain flour (for example graham, spelt flour)
75 g regular wheat flour
25 g vanilla or classic sugar
125 g butter or margarine
1 medium size carrot
about 100 g of plum marmelade for filling
Procedure:
1. Mix both flours, sugar, small pieces of cold butter and finely shredded carrot.
2. Make a compact dough and leave in the fridge for an half of hour.
3. Roll the dough on a floured desk into an oval about 3 mm thick.
4. Cut the dough into 8 triangulars like as if you were cutting a pie.
5. Put a heaped teaspoon on the wider side of the triangular and roll to the top of the triangle. Form into a roll.
6. Bake at 180 °C for about 20 - 25 min.
Let the carrot rolls cool down and enjoy! You can sprinkle them with powdered sugar before serving.
