Nordic oatmeal biscuits with cranberries

This recipe is an instant success. Almost everyone who tastes these biscuits wants a recipe. They are crispy, but not too hard, smell like cinnamon, texture is rich thanks to various kinds of seeds and nuts and dried cranberries. Every bite is just a pleasure. When my Petri firstly tasted tehse biscuits he said that he has never eaten better ones.

This recipe discovered my mum some time ago in a desk caledar which contained various recipes. Her colleague at work suggested her to try to bake these biscuits because they are extremely delicious. Since then these biscuites have settled in our family and we bake them regularly. I call them nordic, because of cranberries and oats. They are also very good eväät, snack, for hiking.




Ingredients

  • 100 g wholegrain wheat flour (can be spelt, graham flour)
  • 100 g oat flakes
  • 100 g butter
  • 100 g cane sugar
  • 1 egg
  • 100 g chopped nuts (walnuts, hazelnuts,..)
  • 100 g dried cranberries
  • 50 g pumpkin seeds
  • 50 g sunflower seeds
  • 50 g flaxseeds
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • pinch of salt
  • a bit of milk if needed


Procedure

Mix the butter with sugar until smooth, add the egg and mix together. In a bowl mix flour with baking soda, cinnamon and salt, add oat flakes, chopped nuts, seeds, dried cranberries and then mix this dried mixture with the wet mixture. Make a dough, can be add a little bit of warm milk, if the consistency is too thick. Then form with wet hand or spoon flat biscuits. Bake at 180֯ C for about 15 min.

Enjoy with a cup of coffee, tea or milk:)
